Description: | This blend was born in 1998, as a result of the union of two grapes: the strength of the Cabernet Sauvignon and the elegance of the Carmenere. This wine honors our Independence, which was signed in Talca. | Year: | 2005 | Tasting Notes: | This remarkable wine is dark red in color, with violet hues. Its bouquet is dark chocolate, cassis, blackberries and coffee. On the palate, one can taste ripe tannins and a balanced finish. | Varieties: | 80% Cabernet Sauvignon, 20% Carmenere. All the varieties are estate grown from Sandy, Clay Loam. | Harvest: | Only hand-picked grapes, between April 20th and May 4th, 2005. | Bottling: | This wine was bottled in mid-June 2006. | Ageing: | 90% aged for 12 months in medium-high toasted American and French oak barrels, and 10% is kept in stainless steel tanks, which provides the perfect balance. | Harmony with food: | When young, serve with game, such as: venison or wild boar in a spicy sauce. | How to drink: | Cellaring until 2012: Decant the wine and let it breath for one hour, serve at 17°C (62,6°F) in a wide glass.
